  • 6 slices of bacon, cut into squares

  • 4 cups of chicken broth
  • 2 cups of half and half
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of sour cream
  • 2 tablespoons of chopped chives

Instructions:

  1. In a large pot, cook the bacon over medium heat until it is crispy. Remove from the pot and set aside.

  2. In the same pot, add the diced potatoes and 1 tablespoon of salt. Cover the potatoes with 1 inch of water and bring to a boil. Reduce the heat to low and simmer for about 20 minutes or until the potatoes are fork-tender.

  3. Drain the potatoes and set them aside. Mash them gently with a fork or potato masher.

  4. In the same pot, leave 1 tablespoon of bacon drippings and add the diced onions. Cook over medium heat for 5 minutes or until the onions are soft and translucent.

  5. Add the minced garlic and butter to the pot and cook for another minute.
