Ingredients:

  • 300g Biscoff biscuits
  • 100g unsalted butter, melted
  • 300g cream cheese, softened
  • 300ml heavy cream
  • 100g powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp instant coffee powder
  • 2 tbsp hot water
  • Cocoa powder, for dusting

Instructions:

  1. Preheat your oven to 180°C (350°F).

  2. Crush the Biscoff biscuits into fine crumbs using a food processor or a rolling pin.

  3. In a mixing bowl, combine the Biscoff crumbs with the melted butter. Mix well until the crumbs are coated evenly.

  4. Press the Biscoff mixture into the bottom and sides of a 9-inch tart pan. Use a flat-bottomed glass to press the crumbs firmly into the pan.

  5. Bake the crust in the preheated oven for 10 minutes, then remove from the oven and let it cool completely.

  6. In a mixing bowl, beat the cream cheese until it is smooth and creamy.

  7. In a separate mixing bowl, whip the heavy cream until it forms stiff peaks.

  8. Add the powdered sugar and vanilla extract to the cream cheese and mix until well combined.

  9. Fold the whipped cream into the cream cheese mixture until it is smooth and well combined.

  10. In a small bowl, mix the instant coffee powder with hot water until it dissolves.

  11. Using a pastry brush, brush the coffee mixture over the bottom of the cooled Biscoff crust.

  12. Pour the cream cheese mixture into the crust, spreading it evenly.

  13. Chill the tart in the refrigerator for at least 2 hours or until it is set.

  14. Before serving, dust the top of the tart with cocoa powder.

  15. Cut into slices and serve chilled.
