New York Style Cheesecake Recipe For Thanksgiving and Christmas Night

 

Enjoy this classic dessert, the New York style cheesecake, with rich, creamy filling and buttery biscuit crust - a delight for all taste buds!

Ingredients

For the Crust:

  • 60g of biscuits
  • 35g of unsalted butter

For the Cheesecake Filling:

  • 300g of cream cheese
  • 90g of sour cream
  • 65g of granulated sugar
  • 80g of fresh cream
  • 1 whole egg
  • 1 egg yolk
  • 1 tablespoon of lemon juice
  • 10g of cornstarch
  • Optional: 5g of soft flour for a firmer texture

Directions

All ingredients should be brought to room temperature before starting.

For the Crust:




  1. Crush the biscuits into small pieces.

  2. Melt the butter in the microwave (about 30 seconds should do) and mix it well with the crushed biscuits.

  3. Press this mixture firmly into your baking mold, forming an even layer that will be the crust of your cheesecake.

  4. Place the crust in the refrigerator to chill while you make the filling.

For the Cheesecake Filling:



  1. Beat the cream cheese until it becomes soft and smooth.

  2. Add the granulated sugar to the cream cheese and continue mixing until the mixture is no longer grainy.

  3. Add sour cream, whole egg, and egg yolk, then mix well.

  4. Add fresh cream and lemon juice to the mixture and combine well.

  5. If using, add the sifted cornstarch and soft flour (sift through a tea strainer) to the mixture and blend until smooth.

  6. Pass the mixture through an all-purpose strainer for a smooth texture.

To Bake

  1. Preheat your oven to 190°C (375°F).

  2. Wrap your mold (with the crust and filling) in aluminum foil and place it into a larger baking pan. Fill the larger pan with about 3cm of hot water, creating a water bath for your cheesecake.

  3. Bake in the preheated oven for 20 minutes, then reduce the temperature to 160°C (320°F) and continue baking for an additional 30 minutes. Note: All ovens vary slightly, so if the top looks like it's going to burn before baking is complete, cover it with additional aluminum foil.

To Cool and Serve:

  1. Once baked, allow the cheesecake to cool in a cooler.

  2. Once cooled, place it in the refrigerator for at least one night.
