The Baking Process

6. Cover the dough with a wrap and freeze it in the fridge for 10 minutes.

7. Cut the dough into pieces with a thickness of 5 mm.

8. Place the cookies on a baking sheet and bake them at 160 degrees Celsius for 3 to 4 minutes. 

    Note: For this type of dough, it's better to use a baking sheet rather than a silpat or silpatot. Also, remember that overbaking is the enemy. The edges of the cookies should not melt like chocolate. If they do, it means you've overcooked them. To achieve a soft, melting texture, you can slightly undercook the cookies. Always check the center temperature of the cooked cookies to make sure it's above 65 degrees Celsius to prevent foodborne illnesses.

And voila! You now have a batch of melting strawberry cookies. Enjoy them warm, or let them cool down before storing them in an airtight container.
