Ingredients:

Foundation:

  • Bisco:   1 box
  •  Unsalted butter:   35g
  • Granulated sugar:   10g
Baked cheese dough:
  • Cream cheese:   180g
  • Granulated sugar:   50g
  • Sour cream:   60g
  • Whole egg:   1 egg
  • Cornstarch:   10g
  • Fresh cream:   80g

Cheese Cream:

  • Cream cheese:   20g
  • Sour cream:   30g
  • Granulated sugar:   5g
  • Fresh cream:   50g

Tools Needed:

  • Pound type

Making the Foundation:

1. Prep the Molds: Lightly spray a pound mold with oil spray and line it with a disposable baking sheet, ensuring it's not laid on the sides.


2. Prepare Bisco: Add all the Bisco to a food processor. Leave the cream on for now. Grind until completely powdered.


3. Mix the Base: Place the unsalted butter and granulated sugar in a bowl and mix with a rubber spatula. Add the crushed Bisco and mix until it comes together.


4. Layer the Molds: Weigh out  30g of the mixture and paste it on one side of the mold up to  2cm below the top. Use a card to ensure it's straight. Repeat with the other side. Once the sides are attached, place the remaining mixture on the bottom and store in the refrigerator until ready to use.


Baked Cheese Dough:

1. Mix Ingredients: Place cream cheese and granulated sugar in a bowl and mix with a whisk until smooth. Warm the cheese in the microwave for about  20 seconds to soften it before stirring.


2. Combine Ingredients: Stir in sour cream, then add whole eggs and cornstarch, mixing well. Add fresh cream and mix thoroughly.


3. Bake: Pour the mixture into the prepared mold. Prepare a heat-resistant mold or vat larger than the mold, and pour hot water about  2cm above the bottom of the mold. Bake in a hot water bath for  40 minutes in an oven preheated to  170℃.

4. Cool and Cut: After baking, the dough will rise to the full height of the mold. Gently push the sides into the mold with a card. Allow it to cool without removing it from the mold, then refrigerate until completely cooled. Trim the ends and cut into your desired size.

Cheese Cream & Finishing:

1. Prepare Cheese Cream: Add cream cheese, granulated sugar, and sour cream to a bowl and mix with a rubber spatula until smooth.

2. Mix with Fresh Cream: In a separate bowl, whisk the fresh cream until foamy and mix it with the cheese from step  1.

3. Apply to Dough: Pour over the baked cheese dough and smooth with a card. Chill in the refrigerator for about  2 hours before removing the mold and trimming to your desired size.


Voila! You now have a rich cheesecake that's not only rich in flavor but also in texture, perfect for any dessert celebration.
