Ingredients:
- 2 sets of fruit sandwiches (each set with 2 slices of bread)
- 8 slices of thickly sliced bread
- 100g of Gateau Levis Free
- 8g of organic granulated sugar
- 4 strawberries
- 1 kiwi
- 2 halved yellow peaches (canned)
Instructions:
1. Prepare the peaches: Cut the yellow peach in half and then into 3 equal pieces. Prepare 4 slices.
2. Prepare the kiwi: Peel the kiwi and cut it in half lengthwise.
3. Prepare the strawberries: Wash the strawberries and remove the stems. Dry them thoroughly with kitchen paper.
4. Mix the Gateau Levis Free and sugar: Add 100g of Gateau Levis Free and 8g of granulated sugar to a bowl of ice water. Mix with a hand mixer for 8 minutes. Store in the fridge until ready to use.
5. Prepare the bread: Slice the bread into 8 pieces (15mm) and prepare 4 pieces. Cut off the ends.
6. Assemble the sandwich: Spread a thin layer of whipped cream on one side of the bread. Paint all four sides. Arrange the fruits (peaches, kiwi, and strawberries) on the bread. Place the whipped cream on top, filling the gaps between each fruit. Spread the mixture so it covers the fruit, then place the bread on top and press down lightly with your hand. Wrap tightly in plastic wrap.
7. Repeat for the second set: Sandwich the other set in the same way and wrap it in plastic wrap. Let it rest in the fridge for at least 1 hour.
8. Cut and serve: Cut diagonally from the top of the plastic wrap into 4 pieces using a knife. Wipe the knife clean with paper after each cut to ensure a clean cut. Remove the plastic wrap and place on a plate.
Enjoy your homemade fruit sandwiches!
