  • 140 g yogurt or sour cream (2/3 cup)
  • 15 g lemon juice (1 tbsp)
  • 120 g heavy cream (1/2 cup)
  • 30 g cornstarch (3 tbsps)
  • 2 eggs
  • 15 g vanilla extract (1 tbsp)

Instructions:

1. Prepare the Crust: Finely crush the Lotus biscuits or graham crackers and mix them well with the melted butter. Press this mixture firmly into the bottom of a 6-inch round cake pan lined with parchment paper (if the pan doesn't have a removable bottom). Chill the crust in the fridge while you make the filling.

2. Make the Filling: In a clean bowl, combine the softened cream cheese, sugar, yogurt or sour cream, lemon juice, heavy cream, cornstarch, vanilla extract, and eggs. Beat until smooth and creamy. For an extra smooth texture, sift the batter once or twice.
