Ingredients:

  • 5 eggs, separated
  • 60 g vegetable oil (4 tbsps)
  • 75 g milk (5 tbsps)
  • 68 g cake flour (1/2 cup)
  • 60 g granulated sugar (1/4 cup)
  • 1 tbsp lemon juice
  • 1 tbsp vanilla extract

Instructions:

1. Prepare the Ingredients:

   - Separate the eggs, placing the egg whites in a bowl and keeping them cool in the fridge.

   - In another bowl, mix the vegetable oil and milk. Sift in the cake flour and mix until smooth. Add the 5 egg yolks and mix well. Set this mixture aside.

2. Preheat and Prepare:

   - Preheat your oven to 140℃ (284℉).

   - Line a brownie pan or cupcake tin with parchment paper or cupcake liners.

3. Beat the Egg Whites:

   - In the bowl with the egg whites, add the lemon juice, vanilla extract, and sugar. Using a hand mixer, beat the egg whites until soft peaks form.

4. Combine Mixtures:

   - Take a scoop of the whipped egg whites and gently fold it into the batter mixture until just combined. Then pour all of the batter back into the remaining whipped egg whites and gently fold it in until just combined.

5. Fill the Molds:

   - Fill each cupcake liner or mold with the batter. Tap the cake tin gently to release any air bubbles. Use a toothpick to run through the batter to break up any remaining air pockets.

6. Bake:

   - Place a baking tray on the lower rack of the oven and pour in enough hot water to create a water bath. Place the cake tin on the tray and bake for about 60 minutes, or until the cakes are golden brown and a toothpick inserted into the center comes out clean.

7. Cool and Serve:

   - Remove the mini cakes from the oven and let them cool completely. Serve as is, or decorate with powdered sugar, glaze, whipped cream, or fresh fruit.

Enjoy these tender and delicious Mini Soft Cakes, perfect for any special occasion or everyday indulgence!
