Ingredients

Crust:

- 1 (17.5-ounce) pouch sugar cookie mix

- 1 (3.5-ounce) box instant French vanilla pudding mix

- ½ cup unsalted butter, melted

- 1 large egg

- 2 tablespoons light brown sugar

- 2 teaspoons vanilla extract

Filling:

- 2 (8-ounce) blocks cream cheese, at room temp and very soft

- 1 large egg

- 3 large egg yolks (discard whites or save for another use)

- ½ cup sour cream

- ½ cup granulated sugar

- 2 teaspoons vanilla extract

- ½ cup toffee bits

Instructions

Crust:

1. Preheat your oven to 350°F (175°C). Line a 9x13-inch baking pan with aluminum foil for easier cleanup, and spray with cooking spray; set aside.

2. combine the sugar cookie mix, instant French vanilla pudding mix, melted butter, egg, light brown sugar, and vanilla extract in a large bowl. Stir until a thick dough forms.

3. Press the dough evenly into the prepared pan to form the crust. Set aside.

Filling:
