- 40g salted butter
- 50g brown sugar
- 1–2 tsp cinnamon

- 2 tbsp lemon juice
- 1/2 tsp cornflour
- 3 tsp cold water
For the Crust:
- 2 sheets frozen shortcrust pastry
- 1 egg (whisked, for brushing)
Instructions
1. Make the Apple Filling
1. In a medium saucepan, combine the chopped apples, salted butter, brown sugar, cinnamon, nutmeg, and lemon juice.
2. Simmer over medium heat until the apples are mostly softened and the mixture becomes fragrant.
3. In a small bowl, mix the cornflour with cold water to form a slurry.
4. Pour the slurry into the simmering apple mixture. Stir until thickened, then remove from heat and let the filling cool completely.
2. Prepare the Pastry
1. Preheat your oven to 180°C (350°F).
2. Take one sheet of shortcrust pastry and use a round cookie cutter (or a glass) to cut out 9 circles. These will form the bases of the pies.
3. From the second sheet, cut strips about 1.5 cm wide to use for the lattice tops.
3. Assemble the Mini Pies
1. Place about 1 tablespoon of the cooled apple filling into the center of each pastry round.
2. Lay 2 strips of pastry parallel across the top of the filling, then lay another 2 strips perpendicular to form a lattice pattern.
3. Trim any excess pastry and use a fork to seal the edges of the rounds.
4. Bake the Pies
1. Brush the tops of the pastry with the whisked egg for a golden finish.
2. Place the pies on a lined baking tray and bake in the preheated oven for 20–25 minutes, or until the pastry is golden brown and flaky.
