Easy & Delicious Blackberry Pie Sweet Rolls Recipe

These blackberry pie sweet rolls combine soft, fluffy dough, a tangy blackberry filling, and a rich cream cheese icing for a decadent treat that's perfect for breakfast, brunch, or dessert.  

Ingredients  

Sweet Rolls  

  1. 1 cup milk
  2. 2 tablespoons butter
  3. 1 package Red Star Yeast Platinum (1/4 oz) or 2¼ teaspoons
  4. 1/4 cup sugar
  5. 2 eggs
  6. 4 cups all-purpose flour
  7. 1 teaspoon kosher salt

Blackberry Pie Filling  

  1. 2 cups blackberries (fresh or frozen)
  2. 1/2 cup sugar
  3. 2 tablespoons cornstarch
  4. Juice of 1 lemon

Cream Cheese Icing

  1. Step 1: Prepare the Dough
  2. 1½ cups powdered sugar
  3. 1 tablespoon heavy cream
  4. 1 teaspoon vanilla extract

Instructions  

Step 1: Prepare the Dough  

  1. Heat milk and butter in a microwave-safe bowl until warm (90-95°F). The butter doesn’t need to be fully melted.  
  2. Stir in yeast and sugar, then set aside for 5-10 minutes until the mixture bubbles and activates.  
  3. Beat the eggs in a large mixing bowl, then add the milk-yeast mixture.  
  4. Mix in 2 cups of flour and kosher salt, stirring well.  
  5. Gradually add the remaining flour, 1/4 cup at a time, until the dough forms a ball and pulls away from the sides of the bowl.

Step 2: Knead and Rise  

  1. Turn the dough onto a lightly floured surface and knead for 3-5 minutes until smooth and no longer sticky.  
  2. Cover the dough with a clean towel or plastic wrap and let it rise for 1 hour, or until doubled in size.  

Step 3: Make the Blackberry Filling  

  1. In a saucepan, combine blackberries, sugar, cornstarch, and lemon juice.  
  2. Cook over medium-high heat until the mixture begins to boil.  
  3. Reduce heat to medium, stirring constantly until the filling thickens.  
  4. Set aside to cool completely.  

Step 4: Roll and Assemble  

  1. Punch down the risen dough and roll it out into a 12x12-inch rectangle.  
  2. Spread the cooled blackberry filling evenly over the dough.  
  3. Starting from one side, roll the dough tightly into a log and pinch the seam to seal.  
  4. Use a serrated knife to cut the log into 12 equal slices.  
  5. Place the rolls on a greased jelly roll pan or pie plate, leaving about 2 inches of space between them.  

Step 5: Final Rise and Bake  

  1. Cover the rolls and let them rise while preheating your oven to 375°F.  
  2. Bake for 17-20 minutes or until golden brown and the centers are fully baked.  

Step 6: Make the Cream Cheese Icing  

  1. In a mixer, beat cream cheese, powdered sugar, heavy cream, and vanilla extract until smooth and fluffy.  

Step 7: Ice and Serve  

  1. Let the baked rolls cool for at least 10 minutes.  
  2. Spread or drizzle the cream cheese icing over the warm rolls.
