Ingredients:

  1. 1 cup (16 Tbsp; 226g) unsalted butter, softened to room temperature.
  2. 4 – 5 cups (480-600g) confectioners’ sugar (see note)
  3. 1/4 cup (60ml) heavy cream, half-and-half, or whole milk, at room temperature
  4. 2 teaspoons pure vanilla extract
  5. Salt, to taste

Instructions:

  1. With a handheld or stand mixer fitted with a paddle attachment, beat the butter on medium speed until creamy, about 2 minutes.
  2. Add 4 and 1/2 cups confectioners’ sugar, the heavy cream, and vanilla extract.
  3. Beat on low speed for 30 seconds, then increase to medium-high speed and beat for 2 full minutes.
  4. Taste and add a pinch of salt if the frosting is too sweet. I typically add about 1/8 teaspoon.
  5. Adjust the consistency as needed—add up to 1/2 cup more confectioners’ sugar if the frosting is too thin or more heavy cream if it’s too thick (add only 1 tablespoon at a time, beat together, then taste and adjust as desired).
  6. Use immediately or cover tightly and store for up to 1 week in the refrigerator or up to 3 months in the freezer. After freezing, thaw in the refrigerator and then beat on medium speed for a few seconds to make it creamy again. If needed, add a splash of heavy cream or milk to thin it out.
Tips for Perfect Buttercream:
  1. Use high-quality butter for the best flavor and texture.
  2. Sift your confectioners’ sugar if it's lumpy to ensure a smooth buttercream.
  3. Use room-temperature ingredients to prevent separation and grainy frosting.
  4. For a stiffer consistency, add more sugar; for a softer, fluffier texture, increase the heavy cream.
  5. Experiment with flavors—add almond extract, a touch of cinnamon, or even a bit of espresso powder for a unique twist.
