Ingredients

Ladyfingers

  1. 3 eggs (separated)
  2. 52 g granulated sugar
  3. 97 g cake flour
  4. 7.5 g cornstarch
  5. 3 g lemon juice

Berry Sauce

  1. 600 g strawberries, hulled and halved
  2. 250 g raspberries
  3. 50 g granulated sugar

Tiramisu Filling

  1. 250 g whipping cream
  2. 25 g granulated sugar
  3. 250 g mascarpone cheese
  4. 10 g coffee liqueur
  5. 4 g instant coffee
  6. 200 g hot water

For Topping

  1. Fresh strawberries, blueberries, and raspberries
  2. Prepared berry sauce

How to Make It

Step 1: Make the Ladyfingers

  1. Preheat your oven to 170°C (338°F). Line two baking trays with parchment paper or baking mats.
  2. Beat the egg whites with lemon juice until foamy, then gradually add sugar and continue beating until soft peaks form.
  3. In a separate bowl, whisk the egg yolks until pale and creamy. Gently fold the yolks into the beaten egg whites.
  4. Sift in the cake flour and cornstarch, folding gently to combine. Transfer the batter to a piping bag and pipe long strips onto the trays.
  5. Dust with powdered sugar and bake for 20 minutes until golden. Let them cool completely.

Step 2: Make the Berry Sauce

  1. Blend the strawberries into a smooth puree.
  2. In a saucepan, combine the strawberry puree, raspberries, and sugar. Cook over medium heat until the mixture thickens.
  3. Allow the sauce to cool completely before using.

Step 3: Prepare the Tiramisu Filling

  1. Beat the whipping cream and sugar until thickened. Add mascarpone cheese and continue beating until stiff peaks form.
  2. Pour in the coffee liqueur and mix until smooth. Transfer the filling to a piping bag.

Step 4: Assemble the Berry Tiramisu

  1. Dissolve instant coffee in hot water. Dip the ladyfingers quickly in the coffee and layer them at the bottom of your serving dish.
  2. Pipe a layer of mascarpone filling over the soaked ladyfingers, then add a second layer of soaked ladyfingers. Top with another layer of mascarpone filling.
  3. Smooth the surface, spread the berry sauce, and decorate with fresh berries.
  4. Cover and chill overnight to let the flavors set and intensify.
